Ingredients
- English cucumber โ 1/2, peeled
- Salt โ 1/2 teaspoon, plus to taste
- Plain Greek yogurt โ 480 g (2 cups)
- Dill โ 1/3 cup, chopped
- Garlic cloves โ 3 to 4, grated
- Fresh lemon juice โ 1 1/2 tablespoons
- Extra virgin olive oil โ 3 tablespoons
- Black pepper โ to taste
Steps to Make Tzatziki
- Prepare the Cucumber
Peel half of an English cucumber and dice it finely. Alternatively, grate it using the large holes of a box grater if you prefer a different texture. - Drain the Cucumber
Transfer the diced cucumber to a bowl lined with a cheesecloth or a fine mesh strainer. Sprinkle with salt and set aside to allow the juices to release. - Mix the Tzatziki Base
In a separate bowl, combine the Greek yogurt, chopped dill, grated garlic, and fresh lemon juice. - Squeeze the Cucumber
Use the cheesecloth to squeeze out as much juice as possible from the salted cucumber. Add this to the yogurt mixture. - Finish and Chill
Stir in the olive oil, and season to taste with additional salt and pepper. Cover the bowl and refrigerate for at least an hour, allowing the flavors to meld.
Once you try this homemade Tzatziki, you’re bound to make it a regular on your table. Its fresh flavors and creamy texture are perfect for many occasions, from casual gatherings to elegant dinners. Enjoy this slice of Mediterranean heaven!
