  1. Prepare the Asparagus
    Snap off the fibrous ends of the asparagus. Boil water in a large pot, add a tablespoon of salt, then cook asparagus for 2-3 minutes until vibrant green and crisp-tender. Remove and set aside.
  2. Cook the Mushrooms
    Melt butter and oil in a large oven-safe pan over medium-high heat. Cook sliced mushrooms for about 5 minutes until soft. Stir in diced onions and cook for another 3 minutes. Add garlic, parsley, salt, and pepper, stir, and cook for 2 more minutes. Transfer to a plate.
  3. Prepare the Chicken
    Slice chicken breasts in half lengthwise and pound to 0.5 cm (1/4 inch) thickness. Season with salt and pepper. Heat butter and oil in the same pan, sautรฉ chicken for 3-4 minutes on each side until golden and cooked through. Transfer to the plate with mushrooms.
  4. Make the Sauce
    In the same pan, add Madeira wine and scrape the bottom to deglaze. Boil until reduced by half, about 5 minutes. Add beef broth and boil until 1/4 of the liquid remains. Lower heat, add whipping cream, and simmer until the sauce thickens. Taste and adjust salt and pepper if needed.
  5. Combine and Finish
    Return chicken to the pan, coat with the sauce, and top with mushrooms and asparagus. Sprinkle with mozzarella cheese. Broil in a preheated oven until the cheese is melted, about 3-4 minutes. Garnish with fresh parsley before serving.
