  1. Prepare the Chicken
    Preheat your oven to 230°C (450°F). Pat the chicken dry with paper towels and ensure it’s at room temperature. Carefully separate the skin from the meat without tearing. Set aside.
  2. Mix the Butter
    Melt the butter with olive oil in the microwave at 50% power. Add chopped tarragon along with salt and black pepper. Mix well.
  3. Season the Chicken
    Using a spoon, apply the butter mixture under and over the chicken skin. Ensure the thighs and breast are well coated.
  4. Prepare Aromatics
    Slice the onions into half-inch thick rings. Cut the garlic head and lemon in half. Stuff the garlic, thyme, and lemon halves into the chicken’s cavity.
  5. Arrange the Dish
    Place sliced onions around the chicken in a roasting dish. Tuck the wings and tie the legs with kitchen twine to prevent burning.
  6. Roast the Chicken
    Place in oven. Reduce the temperature to 220°C (425°F) after closing the door. Roast for 75 to 90 minutes, basting every 30 minutes.
  7. Let It Rest
    Once cooked, let the chicken rest for 20 minutes before serving to allow juices to redistribute.
