Ingredients
- All-purpose flour โ 120 g (1 cup)
- Cinnamon โ 1 teaspoon
- Pumpkin pie spice โ 1 teaspoon
- Baking soda โ 1 teaspoon
- Baking powder โ 1 teaspoon
- Fine sea salt โ 1/4 teaspoon
- Eggs โ 3, room temperature
- Granulated sugar โ 200 g (1 cup)
- Pumpkin puree โ 180 ml (3/4 cup), room temperature
- Powdered sugar โ 60 g (1/4 cup), plus extra for dusting
- Cream cheese โ 230 g (8 oz), softened
- Unsalted butter โ 113 g (1/2 cup), softened
- Vanilla extract โ 1 teaspoon
The Method
- Prep the Pan
Preheat your oven to 190ยฐC (375ยฐF). Generously butter a 33 x 46 cm (13 x 18 in) baking sheet. Line it with parchment paper and butter the parchment too. Dust with a bit of flour. - Prepare the Cake Batter
In a bowl, sift together the flour, cinnamon, pumpkin pie spice, baking soda, baking powder, and salt. In a mixing bowl, beat eggs and sugar on high speed
until thick and light-colored, about 5 minutes. Gently mix in the pumpkin puree. Fold in the dry ingredients just until combined. - Bake the Cake
Spread the batter evenly in the prepared pan. Bake for 12 to 14 minutes, or until the cake springs back when touched. Keep an eye on it, especially if using a dark-colored pan. - Roll and Cool
While still warm, carefully invert the cake onto a powdered sugar-dusted towel. Peel away the parchment paper, then gently roll the cake and towel together. Cool completely. - Make the Cream Cheese Filling
Beat the cream cheese, butter, powdered sugar, and vanilla extract together until smooth and fluffy. - Assemble the Roll
Unroll the cooled cake and spread the filling evenly over the entire surface. Roll up the cake again, then chill in the refrigerator until ready to serve.
This pumpkin roll is not only a feast for the eyes but also a delight for your taste buds, with each bite offering the cozy spices of fall. It’s the kind of dessert you’ll want to share at holidays or keep for yourself! Enjoy with a hot cup of coffee or tea.
