Ingredients
- Bacon โ 170 g (6 ounces)
- Chopped beef โ 900 g (2 pounds)
- Salt โ 1 tablespoon, divided
- Black pepper โ 1.5 teaspoons, divided
- All-purpose flour โ 60 g (1/4 cup)
- Red wine โ 480 ml (2 cups)
- Mushrooms โ 450 g (1 pound), thickly sliced
- Carrots โ 4, rough chopped
- Yellow onion โ 1 medium, diced
- Garlic cloves โ 4, chopped
- Olive oil โ 30 ml (2 tablespoons)
- Tomato paste โ 1 tablespoon
- Beef broth โ 960 ml (4 cups)
- Bay leaves โ 2
- Dried thyme โ 1/2 teaspoon
- Small potatoes โ 450 g (1 pound)
- Parsley โ for garnish, to taste
Steps
- Cook the Bacon
In a large oven-safe pot, sautรฉ the chopped bacon over medium heat until golden brown and crispy. Remove and set aside. - Prepare and Sear the Beef
Combine the beef with 1/2 tablespoon of salt, 1 teaspoon of black pepper, and flour in a bowl. Sear half in the bacon fat until browned on both sides. Repeat with the second half. Remove and set aside with the bacon. - Deglaze the Pot
Pour in the red wine to deglaze, scraping up any browned bits. Add the mushrooms and simmer for 10 minutes. - Sautรฉ Vegetables
Heat olive oil in a skillet, add carrots, onion, and garlic. Sautรฉ for 4 minutes. Add tomato paste, cooking for another minute, then transfer to the stew pot. - Assemble the Stew
Add beef broth, bay leaves, thyme, remaining salt and pepper. Return the beef and bacon, then add the potatoes. Stir well. - Cook in the Oven
Cover with a lid, bake at 163ยฐC (325ยฐF) for 1 hour and 45 minutes. The stew is done when the potatoes are tender and the beef melts in your mouth. - Finish and Serve
